Smoked Salmon Vodka Cream Sauce

Ingredients

  • 1 tablespoon butter
  • 1 tablespoon finely diced onion
  • 1/2 cup diced smoked salmon
  • 2 fluid ounces vodka
  • 1/4 cup heavy whipping cream
  • 1/4 cup chopped tomatoes
  • 1/2 cup tomato sauce
  • salt to taste
  • ground black pepper to taste
  • 1 pinch ground nutmeg
  • 1/8 tablespoon cayenne pepper

Directions

  1. In a large saucepan saute butter and onion with smoked salmon. Once the pan begins to lightly smoke, pull saucepan away from heat source and add the Vodka.
  2. When the Vodka has burned off, return the sauce to heat source and mix in the tomatoes, tomato sauce and heavy cream.
  3. Season sauce with salt, pepper, nutmeg, and chile pepper. Reduce sauce to desired consistency; serve. 


    Cedar Planked Salmon

    Ingredients

    • 3 (12 inch) untreated cedar planks
    • 1/3 cup vegetable oil
    • 1 1/2 tablespoons rice vinegar
    • 1 teaspoon sesame oil
    • 1/3 cup soy sauce
    • 1/4 cup chopped green onions
    • 1 tablespoon grated fresh ginger root
    • 1 teaspoon minced garlic
    • 2 (2 pound) salmon fillets, skin removed

    Directions

    1. Soak the cedar planks for at least 1 hour in warm water. Soak longer if you have time.
    2. In a shallow dish, stir together the vegetable oil, rice vinegar, sesame oil, soy sauce, green onions, ginger, and garlic. Place the salmon fillets in the marinade and turn to coat. Cover and marinate for at least 15 minutes, or up to one hour.
    3. Preheat an outdoor grill for medium heat. Place the planks on the grate. The boards are ready when they start to smoke and crackle just a little.
    4. Place the salmon fillets onto the planks and discard the marinade. Cover, and grill for about 20 minutes. Fish is done when you can flake it with a fork. It will continue to cook after you remove it from the grill.

      Grilled Salmon

      Ingredients

      • 1 1/2 pounds salmon fillets
      • lemon pepper to taste
      • garlic powder to taste
      • salt to taste
      • 1/3 cup soy sauce
      • 1/3 cup brown sugar
      • 1/3 cup water
      • 1/4 cup vegetable oil

      Directions

      1. Season salmon fillets with lemon pepper, garlic powder, and salt.
      2. In a small bowl, stir together soy sauce, brown sugar, water, and vegetable oil until sugar is dissolved. Place fish in a large resealable plastic bag with the soy sauce mixture, seal, and turn to coat. Refrigerate for at least 2 hours.
      3. Preheat grill for medium heat.
      4. Lightly oil grill grate. Place salmon on the preheated grill, and discard marinade. Cook salmon for 6 to 8 minutes per side, or until the fish flakes easily with a fork. 

        Baked Dijon Salmon

        Ingredients

        • 1/4 cup butter, melted
        • 3 tablespoons Dijon mustard
        • 1 1/2 tablespoons honey
        • 1/4 cup dry bread crumbs
        • 1/4 cup finely chopped pecans
        • 4 teaspoons chopped fresh parsley
        • 4 (4 ounce) fillets salmon
        • salt and pepper to taste
        • 1 lemon, for garnish

        Directions

        1. Preheat oven to 400 degrees F (200 degrees C).
        2. In a small bowl, stir together butter, mustard, and honey. Set aside. In another bowl, mix together bread crumbs, pecans, and parsley.
        3. Brush each salmon fillet lightly with honey mustard mixture, and sprinkle the tops of the fillets with the bread crumb mixture.
        4. Bake salmon 12 to 15 minutes in the preheated oven, or until it flakes easily with a fork. Season with salt and pepper, and garnish with a wedge of lemon.

      Salmon Chowder

      Ingredients

      • 3 tablespoons butter
      • 3/4 cup chopped onion
      • 1/2 cup chopped celery
      • 1 teaspoon garlic powder
      • 2 cups diced potatoes
      • 2 carrots, diced
      • 2 cups chicken broth
      • 1 teaspoon salt
      • 1 teaspoon ground black pepper
      • 1 teaspoon dried dill weed
      • 2 (16 ounce) cans salmon
      • 1 (12 fluid ounce) can evaporated milk
      • 1 (15 ounce) can creamed corn
      • 1/2 pound Cheddar cheese, shredded

      Directions

      1. Melt butter in a large pot over medium heat. Saute onion, celery, and garlic powder until onions are tender. Stir in potatoes, carrots, broth, salt, pepper, and dill. Bring to a boil, and reduce heat. Cover, and simmer 20 minutes.
      2. Stir in salmon, evaporated milk, corn, and cheese. Cook until heated through.

  1. Informative overview of all things salmon,it is well cited and seems to contain all necessary information but is it missing an original figure? or did i miss it?

  2. I love the voice of your website. I think that it really adds to the information presented and seems to me that it adds to the reliability of the information you are presenting. I also think that you have a lot of info and its separated by tabs, which is a good way to organize it but with that said there are a lot of tabs, may be a little overwhelming. I suggest consolidate one or two of them.
